Peanut butter stuffed brookies

“Peanut butter stuffed brookies” are a delightful treat combining two beloved desserts: brownies and cookies. Here’s a recipe to make them:


For the Brownie Layer:

  1. 1/2 cup (1 stick) unsalted butter, melted
  2. 1 cup granulated sugar
  3. 2 large eggs
  4. 1 teaspoon vanilla extract
  5. 1/3 cup unsweetened cocoa powder
  6. 1/2 cup all-purpose flour
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon baking powder

For the Cookie Layer:

  1. 1/2 cup (1 stick) unsalted butter, softened
  2. 1/2 cup granulated sugar
  3. 1/2 cup packed brown sugar
  4. 1 large egg
  5. 1 teaspoon vanilla extract
  6. 1 1/2 cups all-purpose flour
  7. 1/2 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1 cup chocolate chips

For the Peanut Butter Filling:

  1. 1 cup creamy peanut butter
  2. 1/2 cup powdered sugar


Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper or lightly grease it.

Make Brownie Batter: In a medium bowl, mix together melted butter, sugar, eggs, and vanilla. Stir in cocoa, flour, salt, and baking powder. Spread the batter into the prepared pan.

Prepare Peanut Butter Filling: In a separate bowl, mix together peanut butter and powdered sugar until smooth. Drop spoonfuls of this mixture over the brownie layer.

Make Cookie Dough: In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the chocolate chips. Drop spoonfuls of cookie dough over the peanut butter layer.

Bake: Gently press the cookie dough down with your fingers to flatten it out. Bake for 35-40 minutes, or until the top is set and lightly browned.

Cool & Serve: Allow the brookies to cool completely in the pan on a wire rack. Once cooled, lift out of the pan using the parchment paper and cut into squares.
