Mexican Cornbread

Ingredients:

1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/3 cup vegetable oil
1 egg
1 (4 ounce) can chopped green chilies, drained
1 cup shredded Cheddar cheese
1/2 cup frozen corn kernels, thawed

Directions:

Preheat the oven to 400°F (200°C). Grease an 8-inch square baking pan.
In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
Stir in milk, vegetable oil, and egg until well combined.
Fold in green chilies, cheese, and corn.
Pour batter into the prepared pan.

Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
