  • 1/2 cup shortening
  • 2 cups granulated sugar
  • 5 large eggs, separated
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut

  • 1/2 cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar, sifted
  • 1/2 cup chopped pecans (for garnish)
  • 1/2 cup flaked coconut (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Combine Dry Ingredients: In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, cream together the 1/2 cup butter, shortening, and granulated sugar until light and fluffy.
  4. Add Egg Yolks: Beat in the egg yolks one at a time, then stir in 1 teaspoon vanilla extract.
  5. Add Dry Ingredients: Alternately add the flour mixture and buttermilk to the creamed mixture, starting and ending with the flour mixture.
  6. Fold in Coconut and Pecans: Stir in the coconut and chopped pecans.
  7. Whip Egg Whites: In a separate bowl, beat the egg whites until stiff peaks form. Gently fold into the cake batter.
  8. Bake: Pour batter into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Make Frosting: While the cake cools, make the frosting. Beat together the cream cheese, 1/2 cup butter, and 1 teaspoon vanilla until smooth. Gradually beat in the powdered sugar.
  10. Frost Cake: Once the cake is completely cool, spread the frosting over the top. Sprinkle with additional chopped pecans and coconut.
  11. Serve: Let the cake set for a few minutes before serving. Enjoy!
