  1. Beef chuck roast (about 3-4 pounds)
  2. Salt and pepper to taste
  3. Olive oil (2 tablespoons)
  4. Onions (2, cut into quarters)
  5. Garlic cloves (4, minced)
  6. Beef broth (2 cups)
  7. Worcestershire sauce (1 tablespoon)
  8. Carrots (4, cut into large pieces)
  9. Potatoes (4, medium-sized, cut into large pieces)
  10. Fresh thyme (1 tablespoon) or dried thyme (1 teaspoon)
  11. Cornstarch (2 tablespoons, optional for thickening)

  1. Season the Roast: Generously season the beef chuck roast with salt and pepper.
  2. Sauté in Instant Pot: Turn on the sauté function in your Instant Pot. Add olive oil and once it’s hot, sear the roast on all sides until browned (about 4-5 minutes per side). Remove the roast and set aside.
  3. Sauté Vegetables: Add onions and garlic to the pot, sautéing for about 2 minutes until they start to soften.
  4. Deglaze the Pot: Pour in a bit of beef broth and scrape the bottom of the pot to remove any browned bits (this adds flavor and prevents a burn notice).
  5. Add Remaining Ingredients: Return the roast to the pot. Add the remaining beef broth, Worcestershire sauce, carrots, potatoes, and thyme.
  6. Cook: Close the lid, set the valve to “sealing,” and cook on high pressure for about 60 minutes for a 3-pound roast (add 20 minutes for each additional pound).
  7. Natural Release: Once cooking is complete, allow for a natural release of pressure for 10 minutes, then do a quick release for any remaining pressure.
  8. Thicken Gravy (Optional): If you desire a thicker gravy, remove the meat and vegetables, and set the Instant Pot to sauté. Mix cornstarch with a little water to make a slurry, then stir into the pot until the gravy thickens.
  9. Serve: Slice or shred the roast, serve with vegetables, and drizzle with gravy.

Enjoy your hearty and delicious Instant Pot Pot Roast!
