  10. Fresh thyme (1 tablespoon) or dried thyme (1 teaspoon)
  11. Cornstarch (2 tablespoons, optional for thickening)

Instructions:

  1. Season the Roast: Generously season the beef chuck roast with salt and pepper.
  2. Sauté in Instant Pot: Turn on the sauté function in your Instant Pot. Add olive oil and once it’s hot, sear the roast on all sides until browned (about 4-5 minutes per side). Remove the roast and set aside.
