Ground Beef And Peppers Skillet

Ingredients:

  • 1 pound (450g) ground beef
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 bell peppers, any color, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder (optional for heat)
  • Salt and pepper, to taste
  • 1 can (14.5 ounces) diced tomatoes, drained (or fresh diced tomatoes)
  • 1 tablespoon tomato paste
  • 1/2 cup beef or chicken broth
  • Fresh parsley or cilantro, chopped (for garnish)
  • Shredded cheese (optional, for serving)
  • Cooked rice or tortillas, for serving (optional)

Instructions:

  1. Prep the Ingredients: Begin by chopping the onion, slicing the bell peppers, and mincing the garlic. Open the can of tomatoes, drain them, and set aside. If you’re using fresh tomatoes, wash and dice them.
  2. Brown the Ground Beef: In a large skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the ground beef, breaking it apart with a spoon or spatula. Cook until the beef is browned and no longer pink, about 5-7 minutes. Season with salt and pepper. Once cooked, remove the beef from the skillet and set it aside.
  3. Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sliced bell peppers. Cook until the vegetables begin to soften, about 3-5 minutes.
  4. Add Garlic and Spices: Add the minced garlic, smoked paprika, cumin, and chili powder to the skillet with the vegetables. Cook for another minute until fragrant.
  5. Combine with Beef: Return the browned ground beef to the skillet with the vegetables.
  6. Add Tomatoes and Broth: Stir in the diced tomatoes and tomato paste. Pour in the beef or chicken broth and stir to combine everything.
  7. Simmer: Reduce the heat to medium-low and let the mixture simmer for about 10 minutes, or until the liquid is slightly reduced and the flavors are well combined.
  8. Garnish and Serve: Taste the mixture and adjust the seasoning if necessary. Sprinkle with chopped parsley or cilantro and shredded cheese if desired.
  9. Serving Suggestions: Serve the ground beef and peppers over cooked rice, wrapped in tortillas, or as is for a low-carb option.
