Epic Beef Nachos Supreme

Ingredients:

For the Beef:

  • 1 lb (450 g) ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • Salt to taste
  • 1/2 cup water

For the Nachos:

  • 1 large bag of tortilla chips
  • 1 (15 oz or 425 g) can of black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or thawed if frozen)
  • 1 large tomato, diced
  • 1/4 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup black olives, sliced
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped (optional)

For the Toppings:

  • Sour cream
  • Guacamole
  • Salsa
  • Lime wedges

Instructions:

Preparing the Beef:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook until it’s translucent, about 3-5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the ground beef to the skillet, breaking it up with a spoon or spatula.
  5. Cook the beef until it’s no longer pink, about 5-7 minutes.
  6. Drain any excess grease.
  7. Sprinkle the taco seasoning over the beef, add 1/2 cup of water, and stir to combine.
  8. Simmer the mixture until the water has evaporated and the beef is well-coated with seasoning. Adjust with salt to taste.
  9. Remove from heat and set aside.

Assembling the Nachos:

  1. Preheat your oven to 375°F (190°C). Arrange the oven rack to the middle position.
  2. On a large ovenproof platter or baking sheet, spread out half of the tortilla chips in an even layer.
  3. Spoon half of the seasoned beef over the chips.
  4. Scatter half of the black beans, corn, tomatoes, jalapeños, black olives, and shredded cheese over the beef.
  5. Repeat with another layer of chips and the remaining beef, beans, corn, tomatoes, jalapeños, olives, and cheese.
  6. Place the platter or baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Final Touches:

  1. Remove the nachos from the oven.
  2. Sprinkle the sliced green onions and fresh cilantro over the top (if using).
  3. Serve immediately with dollops of sour cream, guacamole, and salsa.
  4. Provide lime wedges on the side for a fresh squeeze of lime juice over the nachos.
