- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Instructions:
Preparing the Beef:
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and cook until it’s translucent, about 3-5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet, breaking it up with a spoon or spatula.
- Cook the beef until it’s no longer pink, about 5-7 minutes.
- Drain any excess grease.
- Sprinkle the taco seasoning over the beef, add 1/2 cup of water, and stir to combine.
- Simmer the mixture until the water has evaporated and the beef is well-coated with seasoning. Adjust with salt to taste.
- Remove from heat and set aside.
Assembling the Nachos:
- Preheat your oven to 375°F (190°C). Arrange the oven rack to the middle position.
- On a large ovenproof platter or baking sheet, spread out half of the tortilla chips in an even layer.
- Spoon half of the seasoned beef over the chips.
- Scatter half of the black beans, corn, tomatoes, jalapeños, black olives, and shredded cheese over the beef.
- Repeat with another layer of chips and the remaining beef, beans, corn, tomatoes, jalapeños, olives, and cheese.
- Place the platter or baking sheet in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.
Final Touches:
- Remove the nachos from the oven.
- Sprinkle the sliced green onions and fresh cilantro over the top (if using).
- Serve immediately with dollops of sour cream, guacamole, and salsa.
- Provide lime wedges on the side for a fresh squeeze of lime juice over the nachos.
