Easy Burrito Casserole

  • Onion: 1 medium, chopped
  • Taco seasoning: 1 packet
  • Refried beans: 1 can (16 ounces)
  • Green chilies: 1 can (4 ounces), chopped
  • Flour tortillas: 8-10 (8 inches in size)
  • Salsa: 2 cups
  • Shredded cheese: 2-3 cups (cheddar, Mexican blend, or your preference)
  • Sour cream (optional)
  • Chopped lettuce, tomatoes, olives, green onions (for topping, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Meat: In a large skillet, cook the ground beef/chicken with the chopped onion over medium heat until the meat is no longer pink. Drain any excess fat. Stir in the taco seasoning and cook according to the packet instructions.
  3. Layer the Casserole: In a greased 9×13 inch baking dish, spread a small amount of salsa. Layer half of the tortillas over the salsa, overlapping if necessary. Spread half of the meat mixture over the tortillas, followed by half of the refried beans, a can of green chilies, a layer of salsa, and a generous sprinkle of cheese.
  4. Repeat Layers: Repeat the layers with the remaining tortillas, meat, beans, chilies, salsa, and cheese.
