  1. Cooked Chicken: 2 cups, shredded (you can use rotisserie chicken for convenience)
  2. Doritos Chips: 1 large bag (any flavor you prefer, but Nacho Cheese or Cool Ranch work well)
  3. Sour Cream: 1 cup
  4. Cream of Chicken Soup: 1 can (about 10.5 ounces)
  5. Canned Diced Tomatoes and Green Chilies: 1 can (10 ounces), drained (like Rotel)
  6. Grated Cheese: 2 cups (Cheddar or Mexican blend works great)
  7. Onion: 1 small, finely chopped
  8. Garlic Powder: 1 teaspoon
  9. Ground Cumin: ½ teaspoon
  10. Salt and Pepper: to taste

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Prepare the Chicken Mixture:
    • In a large bowl, mix the shredded chicken, sour cream, cream of chicken soup, drained tomatoes and chilies, half of the grated cheese, chopped onion, garlic powder, cumin, salt, and pepper.
  3. Layer the Casserole:
    • Lightly crush the Doritos (not too fine) and spread half of them at the bottom of a greased baking dish.
    • Spoon the chicken mixture over the Doritos layer evenly.
    • Top with the remaining Doritos and sprinkle the rest of the cheese over the top.
  4. Bake:
    • Place the casserole in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
  5. Serving:
    • Let it cool for a few minutes before serving.
    • You can garnish with chopped green onions, a dollop of sour cream, or sliced jalapeños for an extra kick.
