  1. 4 boneless, skinless chicken breasts
  2. Salt and freshly ground black pepper
  3. 2 cups all-purpose flour, for dredging
  4. 2 large eggs
  5. 1 tablespoon water
  6. 1 cup Italian-style breadcrumbs
  7. 1 cup grated Parmesan, divided
  8. 1 cup olive oil, for frying
  9. 1/2 cup tomato sauce
  10. 1/4 cup fresh mozzarella, cut into small cubes
  11. 1/4 cup chopped fresh basil
  12. 1/2 cup grated provolone

Instructions:
