Ingredients:
For the Burritos:
- 1 pound ground beef (or ground turkey/chicken for a lighter option)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1/2 cup water
- 4 large flour tortillas
- 1 can refried beans (16 oz)
- 1 cup cooked rice (optional)
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- Salt and pepper to taste
For the Sauce:
- 1 can red enchilada sauce (19 oz)
- 1 can green chili sauce (optional, if you like a mix of sauces)
- 1 cup salsa (jarred or homemade)
For Topping:
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- Sour cream
- Diced tomatoes
- Sliced green onions
- Fresh cilantro, chopped
- Sliced black olives (optional)
- Sliced jalapeños (optional)
Instructions:
Preparing the Filling:
- In a large skillet over medium heat, cook the ground beef, onion, and garlic until the meat is no longer pink and the onions are translucent. Drain any excess fat.
- Stir in the taco seasoning and water. Bring to a boil, then reduce heat and simmer, uncovered, for 5 minutes or until thickened. Adjust salt and pepper to taste. Remove from heat.
- If you’re including rice in your burritos, cook the rice according to package instructions and set aside.
Assembling the Burritos:
- Warm the tortillas in the microwave between damp paper towels for 20-30 seconds to make them more pliable.
- Spread each tortilla with a layer of refried beans, leaving a small border around the edges.
- Add the seasoned meat (and rice if using) down the center of each tortilla.
- Sprinkle with a portion of the shredded cheese.
- Roll up the tortillas, tucking in the ends, to form the burritos.
Preparing the Sauce:
- In a saucepan, combine the enchilada sauce, green chili sauce (if using), and salsa. Heat over medium heat until warm.
Baking the Burritos:
- Preheat the oven to 350°F (175°C).
- Place the burritos seam side down in a greased baking dish.
- Pour the warm sauce over the top of the burritos, making sure to cover them completely.
- Sprinkle the remaining cup of shredded cheese over the sauce.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
Serving:
- Carefully transfer the burritos to plates.
- Top with a dollop of sour cream, diced tomatoes, sliced green onions, chopped cilantro, and any other desired toppings.
- Serve immediately.
