Ingredients

Cake:

  1. 2 1/2 cups all-purpose flour
  2. 1 1/2 cups sugar
  3. 1 teaspoon baking soda
  4. 1 teaspoon fine salt
  5. 1 teaspoon cocoa powder
  6. 1 1/2 cups vegetable oil
  7. 1 cup buttermilk, at room temperature
  8. 2 large eggs, at room temperature
  9. 2 tablespoons red food coloring (use the liquid kind)
  10. 1 teaspoon white distilled vinegar
  11. 1 teaspoon vanilla extract

Frosting:

  1. 1 pound cream cheese, softened
  2. 4 cups sifted confectioners’ sugar
  3. 2 sticks unsalted butter (1 cup), softened
  4. 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Lightly oil and flour two 9-inch round cake pans.
  2. Mix the Dry Ingredients: In a medium mixing bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  3. Combine Wet Ingredients: In a large bowl, gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer.
  4. Combine Dry and Wet Ingredients: Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
  5. Bake the Cake: Divide the batter evenly among the prepared pans. Place in oven and bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes.
  6. Cool the Cake: Remove the cakes from the oven and run a knife around the edges to loosen them from the sides of the pans. Invert the cakes onto a cooling rack and let cool completely.
  7. Prepare the Frosting: In a large mixing bowl, beat the cream cheese, sugar, and butter until smooth. Add vanilla and mix to combine.
  8. Frost the Cake: Once the cakes are cooled, frost with the cream cheese frosting. Place one layer of cake on a plate, top it with frosting, then add the second layer and cover the entire cake with frosting.
  9. Serve and Enjoy!
